Ruth Ede has beaten other contestants to emerge as second runner-up in an international food safety challenge held in Denmark, Wednesday.
Ede, who is a fellow of the Ugwumba Leadership Center, established by former Imo State governorship candidate, Uche Nwosu, had earlier won the Nigerian version of the EatSafe Innovation Challenge.
She leads Scratop, a company that utilises and converts bio-waste into healthy soil food for rich fertiliser.
Ede shared photos from the event on her Instagram page, saying, “Today the journey from April 2022 ended. It was a great learning and growth experience at the Eatsafe innovation challenge 2022.
“Congratulations to Dr. Helen, Associate Professor in Ethiopia for taking home the star prize. Congratulations to Miss Oyeyemi, the project lead at Simplix consulting for getting the 1st runner-up position and yes, congratulations to me and the amazing Scratop team for winning the 2nd runner-up position at the Global finals.”
Other Nigerians who pitched at the event include Oyeyemi Fadairo, who clinched the second place position for her idea of using Inflatable Tunnel Solar Dryer in reducing water content to prevent food spoilage and attain food safety.
Tijjani Ali was also at the finale and pitched his innovative cold chain solution for local markets. His mobile refrigerator will help traders protect their crates of tomatoes from exposure to the sun.
According to the organisers, Scaling Up Nutrition Business Network, the challenge is meant to celebrate food safety innovations for traditional markets.
