Traditional yam sauces

Are you one of those people who always say ‘ No, thank you’ when offered yam because you see yams as boring? Here are delicious traditional sauces that would leave you begging for more yams. Enjoy.

Oil Bean Sauce Ingredients: 5 cups of Oil Bean Seeds(Ugba), sliced 200g Goat meat 100g Kpomo 3 cups of Chicken Stock !/2 cup of Palm Oil 1 Onion Bulb, sliced 3 Chilli Peppers, pounded 1 cube Seasoning Cube 2 tbsp Corn Flour (optional) Salt to taste.
Preparation
Season the goat meat, cook until it is soft Pour the Palm oil into a pot and place on heat When it is almost bleached (after 30secs), Put the Onions into the oil Add the pepper and seasoning cube and stir Pour the sliced oil bean seeds and stir fry for about 5mins Add the meat stock and the goat meat, stir and cook for another 2mins If the sauce is too watery, thicken with corn flour. Add salt.

Efo Riro Ingredients: 1/2 cup palm oil Greens e.g. spinach, Efo 10 fresh tomatoes, blended 300g dried fish (optional) 200g stockfish (optional) 1kg Meat Chilli pepper to taste 1 onion bulb, finely chopped Salt to taste 1 seasoning cube.
Prepartions
• Season and boil the meat properly until there is little or no stock remaining
• Put the oil in a pot and add the onions, tomatoes and chilli pepper
• Allow to cook for about 10mins
• Add the dried fish and leave it to simmer for about 3mins
• Add the green leaves, seasoning cubes and salt to taste.
Pumpkin Leave Sauce Ingredients:

Pumpkin leaves, chopped
• 1cup Fresh Tomatoes, chopped
• 300g Seasoned Beef or Chicken, sliced to strips
• 1cup concentrated Meat Stock
• 1/2cup Vegetable oil
• 4 Chilli Pepper
• 1 Onion bulb, chopped • 1 Seasoning cube • 1cup Mushroom, sliced
• Salt to taste.
Preparation
Put the oil in a pot and place on heat Add the onions and stir fry for about 3mins Add the mushroom, the seasoning cube and the chilli pepper Pour in the chicken and the stock Stir and cook for about 5mins Add the pumpkin leaves and cook for another 5mins add salt to taste
